This is the rack used for settling the sediment to the cap of the bottle in sparkling production. We use the traditional method of making sparkling wine as developed to a perfection in the Champagne region of France. Only the Champagne region has the right to refer to their sparkling wine as champagne - hence the reference to 'the traditional method'.
